DARK CHOCOLATE GLAZE

100 g of Water
250 g of Sugar
200 g of Cream
74 g of Glucose
80 g of Auro Cocoa powder
12 g of Gelatin


     

      DARK CHOCOLATE GLAZE 

      1. Boil water, cream, glucose.
      2. Add cocoa powder. Boil it again.
      3. Keep it in chiller or at room temp. Add gelatin at 60°c. Blend it.
      4. Use it when temperature is around 30°c on FROZEN CAKES
